How We Veg

Ian and I aren't the healthiest eaters. I mean, we're pretty healthy, seeing as my meal of choice would be baked chicken with two different veggies, no starches, but we're not healthy as in, were not a tree.

Or my sister. Who's freakish iron will power helps her to continue to look like a living, walking, talking Barbie doll.

But, despite us not being a tree or my sister, we do pretty good. We don't fry foods (uhhh, did you know how scared of splattering oil I am?) and keep our snacking to a bare minimum.

However, we are quite the foragers, so our snacking had to change a couple of months back so that we'd stay healthy.

My "snack," routine is pretty simple. Raw fruits, veggies, and nuts that I prepare and keep constantly stocked.

Raw veggies our pretty limited by our pallets, with red, green, and yellow bell peppers, celery, carrots, cucumbers, and celery as the standards, while I sometimes throw in raw broccoli just for kicks and giggles.

Fruits we try to vary as much as possible, sticking with those that are rich in antioxidants and vitamins and steering clear from the water based fruits (also high in sugar) such as watermelon, cantaloupe, and apples. All sorts of berries and cheeries are on our agendas this season!

A wholesale bag of Almonds graces our shelves right now, which I pull out one small handful and put in a baggie! That usually lasts for 2 servings.

Now, since we are on a pretty strict budget, I've found that by spending 10-15 minutes every other day washing, cutting, and storing these foods in baggies or ready to go single serve containers keeps us snacking on healthier options instead of reaching for those chips or cookies!
We also cut fresh produce and store in a container for when we want steamed veggies! I don't have a steamer here, so I've been using the microwave. This is so easy to just pull out of the fridge, throw one to two servings of mixed veggies in a bowl with water, salt, pepper, and put a plate over it and zap for 2-3 minutes! Presto, steamed veggies!

That's it, that's we veg here!

I think that is so great that you are eating healthy and staying well stocked! I love veggies and fruits and I haven't been doing as well staying stocked on those and I find myself reaching for crackers..bad! I think you just feel so much better when you are eating better! Great Job!

Oh I love fresh veggies! I have a more difficult time with fruit, but find that if I cut it up ahead of time, I will snack on it.

Fun post! I didn't know that tip about steaming in the microwave.

Yum! I should take the time to do that too so I'm not constantly going for the chips and crackers since they are so easy to just grab!

I am addicted to fruit. Ohh, the cravings! I love fresh veggies dipped in my homemade hummus for a snack -- so good with the added protein too!
